Ingredients

Buffalo Chicken Mixture

  • 1.5 cups shredded rotisserie chicken
  • 1/2 cup Frank’s hot sauce (or other Buffalo sauce)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt

Flatbread and Toppings

  • 2 flatbreads (15 ounce package)
  • 1/4 cup ranch dressing, plus extra for garnish
  • 1 green bell pepper, diced (about 1 cup)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup crumbled blue cheese
  • 1/4 cup sliced green onion

Instructions

  1. Preheat the Oven: Place a pizza stone inside the oven and preheat to 450°F if using a stone, or preheat the oven to 425°F if using a baking sheet.
  2. Prepare Buffalo Chicken: In a small mixing bowl, combine shredded rotisserie chicken, Frank’s hot sauce, garlic powder, onion powder, and salt. Mix well until evenly coated.
  3. Prepare Flatbreads: Brush each flatbread evenly with 1/4 cup ranch dressing to serve as the base sauce.
  4. Assemble the Pizza: Distribute the Buffalo chicken mixture evenly over the prepared flatbreads. Sprinkle the diced green bell pepper evenly on top of the chicken.
  5. Add Cheese and Onion: Generously sprinkle shredded mozzarella cheese, crumbled blue cheese, and sliced green onion over the chicken and bell pepper layers.
  6. Bake on Pizza Stone: Using a pizza peel or the back of a baking sheet, slide the flatbread onto the preheated pizza stone. Bake at 450°F for 5-10 minutes or until the cheese is bubbly and the crust turns golden-brown. Repeat with the second flatbread.
  7. Bake on Baking Sheet: If using a baking sheet, place the assembled flatbreads on it and bake at 425°F for 5-8 minutes or until the cheese melts and the crust is crispy and golden.
  8. Cool and Garnish: Allow the flatbreads to cool for 2-3 minutes after baking, then drizzle extra ranch dressing over the top before serving.
