Ingredients

Meat and Seasonings

  • 1 lb lean (at least 80%) ground beef
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1/2 cup water

Sauces and Beans

  • 1 can (10 oz) Old El Paso™ Mild Red Enchilada Sauce
  • 1 can (15 oz) pinto beans, drained and rinsed

Tortillas and Cheese

  • 6 tortillas from 1 package (8.2 oz) Old El Paso™ Flour Tortillas for Soft Tacos and Fajitas (10 Count), cut into 1-inch strips
  • 1 cup shredded Mexican cheese blend (4 oz)

Garnish

  • 3 tablespoons chopped fresh cilantro

Instructions

  1. Cook the ground beef: In a 10-inch skillet over medium-high heat, cook the ground beef for 5 to 7 minutes, stirring frequently until it is no longer pink. Drain excess fat from the skillet.
  2. Add seasoning and sauce: Stir in the taco seasoning mix, water, enchilada sauce, and drained pinto beans. Continue cooking for 3 to 5 minutes, stirring frequently until the sauce thickens slightly. Remove the skillet from heat.
  3. Combine with tortillas and cheese: Mix in the tortilla strips, then top the mixture with shredded Mexican cheese blend. Cover the skillet and set aside for 3 to 4 minutes to allow the cheese to melt.
