Ingredients

Beef Kofta Kabobs:

  • 1 pound ground beef
  • 1/4 cup minced yellow onion
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground cinnamon
  • 8 (6-inch) bamboo skewers, soaked in water

Tzatziki:

  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber, squeezed dry with paper towels
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • 1/4 teaspoon dried dill
  • 1/4 teaspoon kosher salt

Instructions

  1. Gather Ingredients: Collect all the ingredients needed for the beef kofta kabobs and the tzatziki sauce to ensure a smooth cooking process.
  2. Mix Meat Mixture: In a large bowl, combine ground beef, minced yellow onion, chopped parsley, 2 cloves minced garlic, ground cumin, ground coriander, salt, freshly ground black pepper, and ground cinnamon. Mix thoroughly until all ingredients are evenly incorporated.
  3. Shape Kofta Kabobs: Divide the meat mixture into 8 equal portions. Form each portion into an oval-shaped patty around the soaked bamboo skewers, ensuring the pointed end is fully covered by the meat. Place the prepared kabobs on a plate and refrigerate to help them hold their shape.
  4. Preheat Air Fryer: Set the air fryer to 370°F (188°C) and allow it to preheat while preparing the tzatziki sauce.
  5. Prepare Tzatziki Sauce: In a small bowl, combine plain Greek yogurt, grated and squeezed cucumber, 1 clove minced garlic, lemon juice, dried dill, and kosher salt. Mix well and refrigerate until ready to serve to allow flavors to meld.
  6. Cook Kabobs: Place 4 kabobs into the air fryer basket without overcrowding. Air fry for 10 minutes until cooked through and browned. Remove and transfer to a plate. Repeat with the remaining kabobs.
  7. Serve: Serve the hot beef kofta kabobs with the chilled tzatziki sauce, along with warm pita bread and a fresh green salad for a complete meal.

Notes

  • Soaking the bamboo skewers in water before grilling prevents them from burning in the air fryer.
  • Make sure to squeeze excess moisture from the grated cucumber to keep the tzatziki sauce from becoming watery.
  • You can double the recipe easily to serve a larger group.
  • For a spicier kick, add a pinch of cayenne pepper to the meat mixture.
  • Leftover kabobs keep well in the refrigerator for up to 2 days and can be reheated in the air fryer.
