Cooked perfectly in the air fryer, these fajitas are a healthier alternative to traditional methods, ready in under 30 minutes and served with warm tortillas and classic garnishes.

Ingredients

Protein and Vegetables

  • 2 boneless skinless chicken breasts, cut into strips
  • 1 red bell pepper, cut into 1/4" slices
  • 1 yellow bell pepper, cut into 1/4" slices
  • 1 green bell pepper, cut into 1/4" slices
  • ½ yellow onion, cut into 1/4" slices

Seasonings

  • 2 tsp chili powder
  • 1 tsp paprika
  • ½ tsp cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper

Other Ingredients

  • Olive oil, for drizzling
  • Tortillas, for serving
  • Sour cream, for garnish
  • Guacamole, for garnish
  • Chopped cilantro (optional), for garnish

Instructions

  1. Prepare the fajita seasoning: In a small bowl, combine chili powder, paprika, cumin, onion powder, garlic powder, salt, and black pepper. Mix thoroughly with a fork to ensure the spices are evenly blended.
  2. Season the chicken and vegetables: In a large mixing bowl, add the chicken strips, sliced onions, and bell peppers. Drizzle olive oil over them and toss gently to coat. Sprinkle the prepared fajita seasoning over the mixture and toss again until everything is evenly coated.
  3. Arrange in air fryer basket: Transfer the seasoned chicken and vegetable mixture into the air fryer basket, spreading them out evenly to promote even cooking.
  4. Cook the fajitas: Set the air fryer temperature to 350°F (175°C) and cook for 16 to 20 minutes. Halfway through at about 9 minutes, carefully remove the basket and toss the contents to ensure even cooking. Continue cooking until the chicken is fully cooked through and vegetables are tender-crisp.
  5. Serve: Warm the tortillas as desired. Serve the cooked chicken fajitas in the tortillas, garnished with sour cream, guacamole, and optionally chopped cilantro for extra freshness and flavor.
