Ingredients

Salmon Patties

  • 2 large eggs
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh dill
  • 2 tablespoons mayonnaise (Sir Kensington's recommended)
  • 2 teaspoons Dijon mustard
  • 1 teaspoon Old Bay seasoning
  • 12 ounces cooked or canned wild salmon, flaked (from 1 lb fresh salmon or 2 cans of 6 ounces each)
  • 1/2 cup panko breadcrumbs (plain or gluten-free panko, or matzo for Passover)
  • Olive oil spray, for air fryer basket
  • Lemon wedges, for serving

Instructions

  1. Prepare Air Fryer Basket: Place a piece of air fryer parchment paper in the air fryer basket or spray the basket generously with olive oil spray to prevent sticking.
  2. Mix Ingredients: In a medium bowl, combine the eggs, chopped red onion, fresh dill, mayonnaise, Dijon mustard, and Old Bay seasoning. Stir well until evenly mixed. Add the flaked salmon and panko breadcrumbs, then mix gently to combine all elements thoroughly.
  3. Chill the Mixture: Freeze the salmon mixture for 10 minutes to help it firm up, making it easier to form patties. If the mixture feels too wet, add an extra tablespoon of panko breadcrumbs to help bind it.
  4. Form Patties: After chilling, tightly form the mixture into 6 evenly sized patties and place them carefully into the prepared air fryer basket.
  5. Air Fry the Patties: Cook the patties at 400°F (204°C) for 8 to 10 minutes, flipping them halfway through the cooking time. Cook until the patties are golden brown and crispy on the outside.
  6. Serve: Serve the salmon patties over a bed of fresh greens, on potato buns for a sandwich, or in bowls with a squeeze of fresh lemon juice over the top for extra brightness and flavor.
