Prepared in just 15 minutes with the convenience of an air fryer, this recipe yields a crispy, flavorful pizza that’s easy to customize and enjoy.

Ingredients

Base

  • 1 large tortilla (10-inch whole wheat)

Sauce

  • 1/4 cup pizza sauce (more as needed)

Protein

  • 1/2 cup cooked chicken, chopped small

Cheese

  • 1/3 cup shredded mozzarella cheese

Toppings

  • Handful of sliced vegetables (bell pepper, cherry tomatoes, artichoke, red onion, spinach, zucchini, sun dried tomatoes, olives, banana peppers, jalapeño peppers)
  • Fresh herbs (basil, parsley, chives, oregano)

Extras (Add after cooking)

  • Balsamic glaze
  • Ranch dressing
  • Pesto
  • Hot honey
  • Grated parmesan
  • Fresh arugula
  • Lemon juice

Instructions

  1. Prepare the Tortilla: Place the large whole wheat tortilla into your air fryer basket. Gently press it down with your hands if necessary to ensure the tortilla conforms to the shape of the basket for an even base.
  2. Add Sauce and Toppings: Spread 1/4 cup of pizza sauce evenly over the tortilla, reaching close to the edges. Then layer the chopped cooked chicken, followed by shredded mozzarella cheese. Add your desired additional toppings evenly on top, such as sliced vegetables and fresh herbs.
  3. Air Fry the Pizza: Set the air fryer to 400°F (204°C) and cook the pizza for 4 to 7 minutes. There’s no need to preheat the air fryer, which makes assembly easier. Cook the pizza until the cheese bubbles and the tortilla turns crispy.
  4. Rest and Serve: Carefully remove the air fryer basket and let the pizza rest inside for 5 minutes. This helps the toppings set. Then transfer the pizza onto a cutting board, slice it, and add any additional toppings or drizzles such as balsamic glaze or pesto as desired. Serve immediately.

Notes

  • Use a 10-inch whole wheat tortilla for a perfect size and added fiber.
  • Customize toppings based on your preference or what you have on hand, including various vegetables and fresh herbs.
  • Cooking time may vary slightly depending on your air fryer model; watch for bubbling cheese and a crispy tortilla as indicators of doneness.
  • Adding extras like balsamic glaze or hot honey after cooking adds delicious flavor contrast.
  • This recipe is a great way to use leftover cooked chicken protein.
