This easy-to-make American dinner recipe combines creamy textures and delicious seasonings for a hearty main course perfect for weeknight meals.

Ingredients

Chicken and Rice Mixture

  • 1 lb boneless skinless chicken breasts
  • 2 cups Minute rice
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can water (use the empty soup can for measurement)
  • 1 envelope Lipton onion soup mix
  • 1 tbsp butter

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) to ensure it's properly heated for baking the casserole.
  2. Prepare Casserole Dish: Grease a 9x13-inch baking dish with butter or a non-stick spray to prevent sticking and make cleanup easy.
  3. Mix Soup and Rice Base: In a medium bowl, combine the cream of mushroom soup, cream of chicken soup, Minute rice, and one can of water. Stir well until all ingredients are thoroughly mixed to create a creamy rice base.
  4. Assemble Casserole: Pour the rice and soup mixture evenly into the prepared casserole dish. Place the chicken breasts evenly over the rice mixture, ensuring they are covered by the flavorful base.
  5. Add Onion Soup Mix: Sprinkle the Lipton onion soup mix evenly over the chicken breasts to infuse them with rich onion flavor during baking.
  6. Bake the Casserole: Cover the dish tightly with aluminum foil to retain moisture and bake in the preheated oven for 45 to 50 minutes. The chicken should be fully cooked and the rice tender at this point.
  7. Serve: Remove from the oven carefully, let it rest for a few minutes, then serve the creamy chicken and rice casserole warm for a satisfying meal.

Notes

  • Using Minute rice allows for a quick cook time, but you can substitute with regular rice; just adjust cooking time accordingly.
  • You can add vegetables such as peas or carrots to the rice mixture for added texture and nutrition.
  • If you prefer, swap the Lipton onion soup mix for fresh onions and seasoning, but it will alter the taste slightly.
  • For extra richness, dot the top with butter before baking or sprinkle with cheese towards the end of cooking.
  • Make sure the chicken is cooked to an internal temperature of 165°F (74°C) for safe consumption.
