  • 1 teaspoon pure vanilla extract
  • 1 and 1/4 cups (156g) all-purpose flour (spooned & leveled)
  • 1/2 cup (45g) natural unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 2 teaspoons (10ml) milk (any kind, dairy or nondairy)
  • 1/2 cup (100g) granulated sugar (for rolling)

Topping

  • 2224 Andes chocolate mints, unwrapped

Instructions

  1. Cream Butter and Sugars: In a large bowl using a handheld or stand mixer fitted with a paddle attachment, beat the softened butter, granulated sugar, and brown sugar together on medium-high speed until the mixture is fluffy and light in color, about 3 minutes. Add the egg and vanilla extract, then continue beating on high speed until fully combined. Scrape down the sides and bottom of the bowl as needed to incorporate all ingredients.
  2. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, natural unsweetened cocoa powder, baking soda, and salt until evenly mixed to ensure a consistent dough texture.
  3. Mix Wet and Dry Ingredients: With the mixer on low speed, slowly pour the dry ingredient mixture into the wet ingredients. Beat gently on low until just combined to avoid overmixing. The dough will be thick. Increase speed to high and beat in the milk until the dough becomes thick and sticky.
  4. Chill the Dough: Tightly cover the cookie dough and refrigerate it for at least 2 hours and up to 3 days. This chilling step is crucial for the consistency and spread of the cookies.
  5. Prepare Oven and Baking Sheets: Preheat the oven to 350°F (177°C). Line large baking sheets with parchment paper or silicone baking mats and set them aside for baking.

  8. Top with Andes Mints: After baking, allow the cookies to cool on the baking sheet for just 2 minutes. Press one Andes chocolate mint into the top of each warm cookie. Let the chocolate melt and sit for 5 minutes. Then, using a knife, icing spatula, or toothpick, gently swirl and spread the melted chocolate for a beautiful finish.
  9. Cool Completely: Transfer the frosted cookies to a cooling rack to cool completely. The cookies will deflate slightly as they cool.
