  • 4 Tbsp cream cheese (dairy or dairy-free alternative)
  • 1/4 cup blueberry puree (fresh or frozen blueberries, pureed)

Instructions

  1. Prepare Blueberry Puree: Mash fresh or thawed blueberries or blend them in a small blender until smooth to make the blueberry puree.
  2. Mix Ingredients: In a mixing bowl, combine protein powder, coconut flour, blueberry puree, and cream cheese. Use your hands to knead and mix thoroughly until the dough comes together into a pliable mass.
  3. Adjust Sweetness: Taste the mixture and add granulated sugar if desired to achieve your preferred level of sweetness. Mix again to incorporate.
  4. Modify Consistency: If the dough is too soft and sticky, sprinkle in extra coconut flour a teaspoon at a time. If the dough is too dry or thick, add more blueberry puree, water, or almond milk gradually to reach a workable consistency.
  5. Form Balls and Chill: Roll the dough into tablespoon-sized balls. Place them on a tray or plate and refrigerate for 15 minutes to set before serving.
