This Apple Brie Grilled Cheese sandwich combines the creamy richness of brie and cheddar with the sweet crispness of thinly sliced apples and the fresh aroma of thyme. Perfectly buttery and golden, it’s a quick and delicious twist on a classic grilled cheese that you can whip up in just 20 minutes.

Ingredients

Bread and Butter

  • 4 slices of bread (preferably sourdough)
  • 1 tbsp butter

Spreads and Cheeses

  • 1 tbsp dijon mustard (or honey garlic mustard)
  • ¼ cup grated cheddar cheese
  • 1 round brie cheese (approx. 140-160g, 5oz)

Fruit and Herbs

  • 1 apple, thinly sliced
  • 2 tbsp fresh thyme leaves, stems removed

Instructions

  1. Prepare the bread: Lay your slices of bread on a cutting board. Spread butter evenly on the outer sides of each slice, and spread dijon or honey garlic mustard on the inside sides.
  2. Assemble the sandwiches: On two slices, layer the grated cheddar cheese, then place the brie cheese rounds, followed by the thinly sliced apple and fresh thyme leaves. Top each with the remaining slices of bread, buttered side out.
  3. Heat the pan: Place a large pan or skillet over medium-high heat and allow it to warm up before adding the sandwiches. Cooking one sandwich at a time is recommended for easier flipping, especially if your pan is on the smaller side.
  4. Cook the sandwiches: Place the assembled sandwich in the pan. Cook for 3 to 5 minutes on each side until the bread is golden brown and crispy, and the cheeses are melted inside. Press the sandwich gently with a spatula during cooking to help it cook evenly and to make flipping easier. Add more butter to the pan if needed for extra crispness.
  5. Serve: Once cooked, slice each sandwich in half and serve immediately. For extra flavor, accompany with additional mustard or drizzle with a balsamic glaze if desired.

Notes

  • Choosing sourdough bread adds a nice tang that complements the creamy and sweet ingredients.
  • Using thinly sliced apple ensures it softens slightly while cooking but still retains some crunch.
  • Pressing the sandwich while cooking helps melt the cheeses evenly and creates a uniform golden crust.
  • Add a drizzle of balsamic glaze for a sweet and tangy contrast to the savory sandwich.
  • Cooking one sandwich at a time is preferable to avoid overcrowding the pan, ensuring even heat distribution.
