This Apple Cinnamon Baked Oatmeal is a warm, comforting breakfast that's packed with wholesome ingredients like rolled oats, apples, and warming cinnamon. Naturally sweetened with applesauce and maple syrup, and enriched with flaxseed and coconut oil, this baked oatmeal is a nutritious, dairy-free option perfect for a hearty start to your day.

Ingredients

Dry Ingredients

  • 2 cups rolled old-fashioned oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt

Wet Ingredients

  • 2 cups non-dairy milk (unsweetened vanilla almond milk preferred)
  • ½ cup unsweetened applesauce
  • ¼ cup maple syrup
  • 1 tablespoon ground flaxseed
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract

Fruits

  • 1 cup diced apple (divided into ¾ cup and ¼ cup)
  • ½ cup raisins

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375°F (190°C). Spray an 8x8 inch baking dish with non-stick spray to prevent sticking.
  2. Mix Dry and Wet Ingredients: In a large mixing bowl, combine the rolled oats, cinnamon, baking powder, and sea salt. Add the almond milk, unsweetened applesauce, maple syrup, ground flaxseed, melted coconut oil, and vanilla extract. Stir everything together until the mixture is fully combined.
  3. Add Fruits: Fold in the raisins and ¾ cup of the diced apples carefully to evenly distribute the fruits.
  4. Assemble in Dish: Pour the oatmeal mixture into the prepared baking dish. Top the mixture evenly with the remaining ¼ cup of diced apples for a fresh apple topping.
  5. Bake: Bake in the preheated oven for about 40 minutes, or until the center has set and a toothpick inserted comes out clean. This ensures the baked oatmeal is fully cooked through.
  6. Cool and Serve: Let the baked oatmeal cool slightly before serving. For extra flavor, serve with a drizzle of almond butter, almond milk, or additional maple syrup if desired.
  7. Storage and Reheating: Store leftovers in an airtight container in the refrigerator for up to 4 days. To reheat the whole dish, cover with foil and warm in a 350°F oven for about 20 minutes. For single portions, reheat at 350°F in an oven or toaster oven for 5-10 minutes or microwave for 1 minute.

Notes

  • Use old-fashioned rolled oats, not quick oats, for the best texture.
  • Substitute maple syrup with honey if not vegan.
  • Adding a sprinkle of nuts or seeds can add extra crunch and nutrition.
  • This recipe is dairy-free and can easily be made gluten-free by using certified gluten-free oats.
  • Do not overbake to prevent dryness; center should be just set.
