This Apple Pie Filling Coffee Cake combines the comforting flavors of apple pie spice and sweet apple fruit filling with a moist, tender cake base, topped off with a smooth vanilla glaze. Perfect for breakfast, brunch, or a cozy dessert, this coffee cake is easy to prepare and bakes to golden perfection in just 45 minutes.

Ingredients

Cake

  • 15.25 ounce box white cake mix
  • 3 large eggs
  • 1 cup sour cream
  • ¼ cup whole milk
  • 2 teaspoons apple pie spice
  • 1 teaspoon vanilla bean paste
  • 21 ounce can Lucky Leaf apple fruit filling

Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla bean paste

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and spray a 9x13 inch baking dish with non-stick cooking spray to ensure the cake won’t stick during baking.
  2. Prepare Cake Batter: In the bowl of an electric mixer or a large mixing bowl, combine the white cake mix, eggs, sour cream, whole milk, apple pie spice, and vanilla bean paste. Mix on medium speed for about 2 minutes until the batter is smooth and well blended.
  3. Assemble Cake: Pour the prepared batter evenly into the sprayed baking dish. Then, top the batter by evenly distributing the apple fruit filling over the surface, ensuring good coverage for flavor and moisture.
  4. Bake: Place the baking dish in the preheated oven and bake for approximately 35 minutes. The cake is done when it is fully set and a toothpick inserted in the center comes out clean.
  5. Prepare Glaze: While the cake is baking, whisk together the powdered sugar, milk, and vanilla bean paste in a bowl until smooth. Adjust consistency by adding more milk if too thick, or more powdered sugar if too thin.
  6. Glaze and Cool: Once the cake is out of the oven, drizzle the prepared glaze evenly over the top. Allow the cake to cool before serving to let the glaze set properly.

Notes

  • You can substitute the apple fruit filling with homemade stewed apples for a fresher taste.
  • Make sure the glaze consistency allows easy drizzling but isn’t too runny, or it might soak into the cake excessively.
  • Store leftovers covered at room temperature for up to 2 days or refrigerate for up to 5 days.
  • This coffee cake is excellent served slightly warmed with a cup of coffee or tea.
