These Baked Feta Potatoes are a delightful combination of crispy roasted potatoes, creamy baked feta, and aromatic herbs, topped with a zesty lemon and honey drizzle. Par-boiling the potatoes before roasting ensures a perfect texture, while the roasted garlic adds a rich, mellow flavor. This easy yet impressive dish makes a fantastic side or a satisfying vegetarian main course.

Ingredients

Potatoes and Herbs

  • 2 large baking potatoes
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 1/4 cup (20g) fresh basil

Feta and Flavorings

  • 1 200g block of feta
  • 2 tbsp olive oil
  • 1 head of garlic (top cut off)
  • 1 lemon, halved
  • 1 tbsp honey

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (390°F) to prepare for roasting the potatoes and garlic.
  2. Par-boil Potatoes: Wash and cube the potatoes. Place them in a saucepan, cover with water, and bring to a boil. Par-boil the potatoes for 6-8 minutes (no longer than 10), then drain them and steam dry for 2-3 minutes.
  3. Season Potatoes: Transfer the potatoes to a baking dish. Add thyme, oregano, salt, black pepper, and 2 tablespoons of olive oil. Stir well to coat the potatoes evenly with the seasonings and oil.
  4. Prepare Garlic: Drizzle the garlic head with a little olive oil, wrap it in foil, and place it in the baking dish alongside the potatoes.
  5. Roast Potatoes and Garlic: Roast the potatoes and garlic in the oven for 30-40 minutes until the potatoes are golden and crispy and almost cooked through.
  6. Add Feta and Lemon: Remove the dish from the oven and take out the garlic. Place the feta block in the center of the baking dish, dipping one side in the seasonings before flipping it over. Squeeze half of the lemon over the feta.
  7. Finish Baking Feta: Return the dish to the oven and bake for an additional 15 minutes until the feta is soft and warmed through.
  8. Prepare Roasted Garlic: Once cooled, squeeze the roasted garlic cloves out of their skins and mash them with the flat side of a knife to a paste-like consistency.
  9. Combine Ingredients: Stir the mashed garlic and juice from the remaining half of the lemon back into the potatoes. Add the fresh basil and gently mix everything together with a spoon, combining the roasted potatoes with the baked feta.
  10. Garnish and Serve: Drizzle the honey over the potato mixture and sprinkle with additional torn basil and red chili flakes to taste. Serve immediately and enjoy!

Notes

  • Par-boiling the potatoes prevents sogginess and helps achieve a crispier roast.
  • Adjust red chili flakes based on your preferred spice level.
  • Use fresh lemon juice for a bright, fresh flavor that complements the richness of the feta.
  • Adding honey balances the savory and spicy elements with a touch of sweetness.
  • Leftovers can be refrigerated and gently reheated in the oven to maintain texture.
