This classic baked stuffed shrimp recipe, lovingly created over 30 years ago, features jumbo shrimp filled with a flavorful mixture of crackers, scallops, crabmeat, and seasonings. Baked to perfection until the shrimp are opaque and the stuffing is golden brown, it pairs wonderfully with melted butter or lemon and a fresh garden salad alongside rice pilaf or a baked potato.

  • 2 (4 ounce) packages crushed buttery round crackers (such as Ritz®)
  • ½ cup freshly chopped parsley
  • 5 saltine crackers, crushed
  • ½ teaspoon celery salt
  • 1 clove garlic, minced
  • 4 sea scallops, chopped
  • ½ cup chopped imitation crabmeat
  • ¼ cup butter, melted
  • ¼ cup white wine
  • 20 jumbo shrimp, peeled and deveined

Instructions

  1. Prepare Baking Dish: Preheat your oven to 375°F (190°C) and coat a baking dish with cooking spray to prevent sticking.
  2. Make the Stuffing: In a large bowl, combine the crushed buttery round crackers, chopped parsley, crushed saltine crackers, celery salt, and minced garlic. Stir in the chopped scallops, imitation crabmeat, melted butter, and white wine until the mixture is well incorporated.
  3. Prepare the Shrimp: Lay each jumbo shrimp flat on a work surface and slice horizontally through the middle, taking care not to cut all the way through, effectively creating an open book shape. Repeat for all shrimp.
  4. Stuff the Shrimp: Spoon a heaping tablespoon of the stuffing mixture into each shrimp, spreading it evenly within the opened halves. Place each stuffed shrimp, back side down, into the prepared baking dish.
  5. Add Moisture: Pour 1 to 2 tablespoons of water into the bottom of the baking dish to help keep the shrimp moist while baking.
  6. Bake: Place the baking dish in the preheated oven and bake for 15 to 18 minutes, or until the shrimp turn opaque and the stuffing begins to brown lightly.
