Wet Ingredients

  • 1 stick (½ cup) salted butter, melted (unsalted can be used with ¼ tsp salt added)
  • 1 cup light brown sugar (dark brown sugar can also be used)
  • 1 tablespoon vanilla extract
  • 1 large egg
  • ½ cup mashed banana (about 1 large banana)

  • 1 cup all-purpose flour

  • ½ cup chocolate chips (or chopped nuts as an alternative)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper or aluminum foil and spray with cooking spray to prevent sticking. Set aside.
  2. Mix Wet Ingredients: In a large mixing bowl, combine the melted butter and brown sugar, mixing until fully incorporated and smooth. Add the vanilla extract and egg, stirring thoroughly to create a uniform batter.
  3. Add Dry Ingredients and Add-ins: Gradually add the flour to the wet mixture, stirring until just combined. Then fold in the mashed banana and chocolate chips gently to avoid overmixing, which can make the blondies tough.
  4. Bake: Pour the batter evenly into the prepared baking dish. Bake in the preheated oven for 22 to 28 minutes, until the edges are golden and a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
  5. Cool and Serve: Allow the blondies to cool in the pan for at least 10 minutes. Once cooled, cut into 9 large bars or 16 smaller squares as preferred. Store covered in the refrigerator for up to one week.
