Ingredients

Base Mixture

  • 11 ounces vanilla wafers
  • 8 ounces cream cheese, softened
  • 2 ripe bananas, mashed

Topping and Coating

  • 8 ounces white chocolate
  • 20 banana chips

Instructions

  1. Process Vanilla Wafers: Place the vanilla wafers in a food processor and pulse until they become fine crumbs.
  2. Add Cream Cheese and Bananas: Add the softened cream cheese and mashed ripe bananas to the crumbed wafers.
  3. Form Batter: Pulse the mixture in the food processor until a stiff, cohesive batter forms.
  4. Scoop and Shape Balls: Using a spoon or small scoop, form the batter into small balls about 1.5 inches in diameter.
  5. Freeze Balls: Place the formed balls on a tray and freeze them for 15 minutes to firm up.
  6. Melt White Chocolate: While freezing, melt the white chocolate using a double boiler method on the stovetop until smooth and glossy.
  7. Dip Balls in Chocolate: Once the balls are frozen and firm, dip each one carefully into the melted white chocolate coating them completely.
  8. Add Banana Chip Topping: Immediately after dipping, place a banana chip on top of each truffle to garnish.
  9. Set Chocolate: Place the dipped truffles on parchment paper and refrigerate them until the chocolate is fully set (about 10-15 minutes).
  10. Serve: Once set, the Banana Pudding Truffles are ready to serve and enjoy.

Notes

  • Make sure the cream cheese is softened to room temperature for easier blending and smoother texture.
  • Use ripe bananas for natural sweetness and better flavor integration.
  • If white chocolate is not melting smoothly, add a small amount of vegetable oil or shortening to assist the melting process.
  • Store the truffles in an airtight container in the refrigerator to maintain freshness, ideally consumed within 3-4 days.
  • Optionally, you can substitute banana chips with crushed vanilla wafers or nuts for varied texture.
