These Bang Bang Chicken Skewers are a flavorful and spicy grilled appetizer featuring tender chicken cubes marinated in a creamy, tangy, and slightly sweet Bang Bang sauce. Perfectly charred on the BBQ grill and finished with a fresh cilantro garnish, they make an irresistible snack or party dish.

Ingredients

Bang Bang Sauce

  • ⅔ cup mayonnaise (about 10-12 tablespoons)
  • 4 tablespoons sweet chili sauce
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 2 teaspoons soy sauce

Chicken Skewers

  • 2 large chicken breasts (or thighs/tenderloins, cut into cubes, about ~1 lb / 450 grams)
  • ½ teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon chopped cilantro (fresh coriander)
  • Bamboo or metal skewers
  • Oil spray (if needed)

Instructions

  1. Make the sauce: In a bowl, thoroughly mix together the mayonnaise, sweet chili sauce, Sriracha sauce, honey, lime juice, and soy sauce until smooth and well combined. Set this Bang Bang sauce aside.
  2. Season the chicken: Toss the cubed chicken with salt, garlic powder, and smoked paprika to evenly coat the pieces with the spices.
  3. Marinate: Add 4-5 tablespoons of the prepared Bang Bang sauce to the seasoned chicken cubes. Mix well to fully coat the chicken and let it marinate for 10-15 minutes at room temperature or up to overnight in the refrigerator for deeper flavor.
  4. Thread onto skewers: If using bamboo skewers, soak them in water for at least 30 minutes to prevent burning. Then thread 6-8 pieces of the marinated chicken onto each skewer, ensuring they are packed but not too tight.
  5. Grill: Preheat a BBQ grill to medium-high heat. Place the chicken skewers on the grill and cook for 8-10 minutes per side, turning carefully to achieve an even char and cook the chicken thoroughly until the internal temperature reaches 165°F (74°C).
  6. Glaze & Serve: Once cooked, brush the skewers generously with the remaining Bang Bang sauce and sprinkle freshly chopped cilantro over the top. Serve the skewers hot, perfect as an appetizer or main dish accompaniment.

  • For juicier results, you can marinate the chicken overnight in the refrigerator.
  • Chicken thighs can be used instead of breasts for a richer flavor and more tender texture.
