Ingredients

Salmon Bites

  • 8-10 oz skinless and boneless salmon, cut into 1-inch cubes
  • 1 Tbsp soy sauce
  • ½ Tbsp olive oil or avocado oil
  • 1 tsp garlic powder

Bang Bang Sauce

  • 3 Tbsp mayonnaise (light if desired)
  • 2 Tbsp sweet Thai chili sauce
  • 1-2 tsp sriracha
  • 1 tsp rice vinegar
  • 2 tsp soy sauce
  • ½ tsp garlic powder

Cucumber Salad

  • 1 ½ cup thinly sliced mini cucumbers
  • ¼ small red onion, thinly sliced
  • 1 ½ Tbsp rice vinegar
  • ½ Tbsp soy sauce
  • ½ Tbsp chili crisp condiment
  • 1 tsp honey
  • 1 clove garlic, minced

Additional Ingredients

  • 2 cups cooked white rice (1 cup per bowl)
  • Sesame seeds, for garnish
  • Red pepper flakes, optional garnish
  • Sliced green onion, optional garnish

Instructions

  1. Heat oven and cook rice: Position the oven rack to the middle and preheat to 425°F (220°C). Line a baking sheet with parchment paper and set aside. If you are making rice fresh, start cooking it now according to the package instructions.
  2. Prep salmon bites: In a medium mixing bowl, combine the cubed salmon with 1 Tbsp soy sauce, ½ Tbsp olive or avocado oil, and 1 tsp garlic powder. Mix gently to coat the salmon evenly and set aside to marinate briefly.
  3. Make bang bang sauce: In a large mixing bowl, whisk together 3 Tbsp mayonnaise, 2 Tbsp sweet Thai chili sauce, 1-2 tsp sriracha (adjust to spice preference), 1 tsp rice vinegar, 2 tsp soy sauce, and ½ tsp garlic powder until smooth. This bowl will be used to toss the cooked salmon later.
  4. Make cucumber salad: In a small bowl, combine 1 ½ cup thinly sliced mini cucumbers, ¼ small thinly sliced red onion, 1 ½ Tbsp rice vinegar, ½ Tbsp soy sauce, ½ Tbsp chili crisp condiment, 1 tsp honey, and 1 minced garlic clove. Toss well to combine and set aside to let flavors meld.
  5. Cook salmon bites: Spread the marinated salmon cubes in a single layer on the prepared baking sheet, minimizing overlap. Bake in the preheated oven for 8-12 minutes until the salmon is cooked through and flakes gently with a fork. For extra crisp edges, finish under the broiler for 1-3 minutes, watching closely to avoid burning.
  6. Mix salmon with sauce: Transfer the hot cooked salmon cubes into the bowl containing the bang bang sauce. Gently toss until each piece is well coated with the creamy sauce.
  7. Assemble bowls: Divide 2 cups cooked white rice evenly between two serving bowls. Top each bowl with the bang bang salmon bites and a generous portion of cucumber salad. Sprinkle with sesame seeds, red pepper flakes, and sliced green onions if desired. Serve immediately and enjoy your flavorful bang bang salmon bites bowls!

Notes

  • You can substitute white rice with brown rice or cauliflower rice for a healthier option.
  • Adjust sriracha in the bang bang sauce to control the spice level.
  • Broiling the salmon at the end adds a lovely caramelized finish but is optional.
  • Chili crisp condiment in the cucumber salad adds a spicy crunch; omit if you prefer milder flavors.
  • Mayonnaise can be replaced with vegan mayo for a dairy-free version.
  • Make sure to cut salmon into uniform cubes for even cooking.
