  • 1 lb chopped cooked chicken breasts
  • 1 cup black beans (rinsed and drained)
  • 1 cup bell peppers (any colour, diced)
  • 2 tbsp jalapeno (diced, optional for added spice)
  • ½ cup red onion (diced)
  • 1 cup spinach (chopped)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp cumin
  • ½ tsp paprika
  • ½ tsp chili powder
  • 1/3 cup plain Greek yogurt
  • 1/3 cup low sugar BBQ sauce
  • 1 cup cheddar cheese (shredded)
  • 4 burrito sized whole wheat tortillas
  • 2 tsp olive oil

Instructions

  1. Prepare the Filling: In a large bowl, combine chopped cooked chicken, bell peppers, jalapeno (if using), red onion, spinach, salt, black pepper, cumin, paprika, chili powder, Greek yogurt, BBQ sauce, and shredded cheddar cheese. Mix all the ingredients well until evenly incorporated. For extra cheesiness, add an additional 1/4 cup of shredded cheese.
  2. Heat Tortilla and Add Filling: Place a large pan over medium heat and warm one tortilla by heating each side for about 30 seconds. Brush a thin layer of olive oil on one side of the tortilla. Flip the tortilla over, then spread approximately 1.5 cups of the prepared filling evenly onto half of the tortilla surface.
  3. Cook the Quesadilla: Fold the other half of the tortilla over the filling to form a half-moon shape. Brush the top of the quesadilla with a thin layer of olive oil. Cook on medium heat for 3 to 5 minutes until the bottom is golden and crispy. Carefully flip the quesadilla and cook the other side for another 3 to 5 minutes until golden and the cheese inside is melted.
  4. Cool and Slice: Remove the cooked quesadilla from the pan and let it cool for about 5 minutes. This resting time helps the filling set. Then, slice the quesadilla into 4 equal triangle portions for serving.
  5. Repeat: Repeat the heating, filling, cooking, and slicing steps with the remaining tortillas and filling until all four quesadillas are prepared.

  • Adjust the amount of jalapeno to control the spice level or omit for a milder flavor.
  • Use low sugar BBQ sauce to keep the recipe balanced and not too sweet.
