Bread and Spread
2 slices of thick cut Italian white bread
1 tbsp margarine or butter (softened)
Cheese
2 slices of sharp cheddar cheese
2 slices of smoked gouda
Filling
1/2 cup chopped cooked chicken breast (Tyson Grilled & Ready recommended)
2 tbsp BBQ sauce
2 tbsp sliced red onion
1 tsp chopped cilantro
Instructions
Preheat skillet: Heat a skillet over medium heat to prepare for toasting the sandwich ensuring an even, golden crust.
Assemble sandwich: Spread the softened margarine or butter on one side of each bread slice. On one slice (butter side down), layer sharp cheddar cheese, chopped cooked chicken, sliced red onion, chopped cilantro, BBQ sauce, smoked gouda, then top with the second slice of bread (butter side up).
Cook sandwich: Place the assembled sandwich butter side down onto the hot skillet. Use the back of a spatula to gently press the sandwich down for better contact and even browning. Cook for 1-2 minutes until the bread is nicely toasted and golden brown.
Flip and toast other side: Carefully flip the sandwich using the spatula and toast the other side for an additional 1-2 minutes until cheese has melted and both sides are crisp and golden.
Serve: Remove from skillet, cut the sandwich in half, and enjoy immediately while warm and melty.
Notes
For extra crispiness, you can add another small pat of butter when flipping the sandwich.
Use pre-cooked grilled chicken for convenience or substitute with rotisserie chicken.
