Ingredients

Beef Mixture

  • 1 pound ground beef
  • 1/2 cup white onion, chopped

  • 1/2 teaspoon garlic powder
  • 1/4 cup water

  • 3/4 cup tomatoes, diced
  • 3/4 cup sour cream

Cheese Sauce

  • 1 1/2 teaspoons cornstarch
  • 12 ounces evaporated milk (one can)
  • 2 teaspoons hot sauce
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon salt

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the nachos.
  2. Brown Beef and Onion: In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is fully cooked and no longer pink, about 6 minutes. Drain off excess oil to keep the dish from getting greasy.
  3. Season Beef: Stir in chili powder, cumin, kosher salt, onion powder, and garlic powder into the beef mixture. Add 1/4 cup water and simmer for 5 minutes, stirring occasionally, until the liquid has evaporated and flavors meld.
  4. Warm Refried Beans: Heat the canned refried beans in the microwave for about 2 minutes, stirring halfway through to ensure even warming.
  5. Prepare Baking Sheets: Line two baking sheets with foil. Spread tortilla chips evenly on the foil-lined sheets.
  6. Assemble Nachos: Evenly distribute the warmed refried beans over the chips, then top with the seasoned beef and pour over the cheese sauce prepared in the next step.
  7. Bake Nachos: Bake the assembled nachos in the preheated oven for 5 to 10 minutes, until the cheese sauce is bubbly and everything is heated through.
  8. Make Cheese Sauce: In a saucepan over medium heat, bring the evaporated milk to a simmer. In a bowl, toss shredded cheddar cheese with the cornstarch.
