Instructions

  1. Prepare Ingredients: Gather all ingredients and preheat your oven to 325°F (165°C).
  2. Sear the Meat: Heat a Dutch oven or heavy pot over medium-high heat, add olive oil. Place the chuck roast in the center and sear for 4 minutes on one side. Using tongs, turn the meat and sear for an additional 3 to 4 minutes on each of the other sides. Remove the meat from the pot and set aside.
  3. Sauté Aromatics: Arrange chopped onion, minced garlic, and one bay leaf on the bottom of the pot. Sprinkle with salt and freshly ground black pepper.
