This Best Scalloped Potatoes recipe features tender Yukon Gold potatoes baked in a creamy mixture of heavy cream, milk, garlic, and fresh thyme, layered with rich Gruyère cheese for a perfectly golden and bubbly finish. A comforting and classic side dish ideal for any occasion.

Ingredients

Potatoes and Dairy

  • 2 lbs Yukon Gold potatoes (about 4), peeled and sliced 1/8 inch thick
  • 2 tbsp butter (divided, room temperature)
  • 1 cup heavy cream
  • 1 cup whole milk
  • 4 oz Gruyère cheese, coarsely grated (about 1.5 heaping cups)

Seasonings

  • 3 cloves garlic, crushed
  • 1/2 tbsp fresh thyme
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Oven and Dish: Preheat the oven to 375°F. Generously butter a 2-quart baking dish to prevent sticking and add flavor.
  2. Slice Potatoes: Peel the Yukon Gold potatoes and slice them into 1/8 inch thick rounds to ensure even cooking and tenderness.
  3. Cook Potatoes in Cream Mixture: In a large pot, combine the sliced potatoes with heavy cream, whole milk, crushed garlic, fresh thyme, salt, and freshly ground pepper. Bring the mixture to a boil over high heat, then reduce to medium and simmer for 1 minute. Remove from heat and let stand for 10 minutes to allow flavors to meld.
  4. Layer Potatoes and Cheese: Spoon one-third of the potato mixture into the buttered baking dish and sprinkle with half of the grated Gruyère cheese. Repeat with another one-third of the potato mixture, topping again with cheese. Dot with half of the remaining butter. Finish with the last layer of potatoes.
  5. Bake the Dish: Loosely cover the dish with foil and bake for 35-40 minutes until the potatoes are tender and cooked through.
  6. Broil to Finish: Remove the foil and broil the scalloped potatoes for 3-5 minutes until the top is bubbly and golden brown.
  7. Rest Before Serving: Allow the scalloped potatoes to rest for 15-30 minutes; this helps the dish set for easier slicing and optimal flavor.

Notes

  • Yukon Gold potatoes are preferred for their creamy texture and flavor, but Russet potatoes can be substituted if needed.
  • Ensure slices are uniformly thin for even cooking.
  • Letting the dish rest after baking improves texture and makes serving easier.
  • For a sharper cheese flavor, consider mixing in a small amount of aged cheddar with Gruyère.
  • Use freshly crushed garlic and fresh thyme for the best aromatic results.
