Ingredients

Vegetables

  • 2 medium eggplants (about 1 1/2 lb), partially peeled and sliced lengthwise
  • 3 Russet potatoes, peeled and sliced lengthwise (1/2-inch thickness)
  • 2 large zucchini, sliced lengthwise (1/2-inch thickness)

Olive Oil & Seasonings

  • Extra virgin olive oil (approximately 1/3 cup + 2 tbsp)
  • Salt (kosher salt for salting eggplant and 1/2 tsp for béchamel, plus more as needed)
  • 1 tsp dry oregano
  • Pinch of ground cinnamon
  • 1/4 tsp ground nutmeg (for béchamel) + 1/2 tsp nutmeg (for lentil sauce)

Béchamel Sauce

  • 2/3 cup all-purpose flour
  • 4 cups 2% milk, warmed
  • 2 large eggs
  • Salt and pepper to taste

Lentil Sauce

  • 1 yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 1/4 cups cooked black lentils (from 1/2 cup uncooked black lentils)
  • 1 14-oz can crushed tomatoes
  • 1/2 cup vegetable broth or water

Instructions

  1. Preheat oven: Heat the oven to 400°F (200°C).
  2. Salt the eggplant: Lay sliced eggplant on paper towels, sprinkle with kosher salt, and let sit for 20–30 minutes to remove excess moisture and bitterness. Pat dry with paper towels afterward.
  3. Make the béchamel sauce: In a large saucepan, heat olive oil over medium-high heat until shimmering. Stir in flour, salt, and pepper, and cook until golden. Gradually whisk in warmed milk, stirring occasionally for 5-7 minutes until thickened. Add nutmeg. Temper eggs by whisking a small amount of hot béchamel into them, then mix back into the saucepan. Cook gently for 2 more minutes. Adjust seasoning and set aside to cool slightly.
  4. Prepare lentil sauce: Heat 1 tbsp olive oil in a large pan over medium heat. Sauté chopped onion and garlic for 3–4 minutes until fragrant. Add cooked lentils, crushed tomatoes, broth or water, salt, oregano, nutmeg, and cinnamon. Bring to a boil, then reduce heat and simmer partially covered for 15–20 minutes.
  5. Bake the vegetables: Arrange potato, zucchini, and eggplant slices on oiled baking sheets. Brush with olive oil and bake for 15–20 minutes until just tender.
  6. Assemble the moussaka: Spread a thin layer of lentil sauce on the bottom of a 9 x 13-inch baking dish. Layer the baked vegetables on top, then cover with the remaining lentil sauce. Pour and smooth the béchamel sauce evenly over the top.
  7. Bake: Place the assembled moussaka in the oven’s middle rack and bake for 45 minutes, or until the béchamel topping turns golden brown. If needed, broil briefly while watching carefully to achieve a beautiful golden crust.
  8. Rest and serve: Remove from oven and let the moussaka rest for at least 20 minutes before cutting into 12 squares. Serve warm and enjoy!
