Topped with fragrant fresh basil and baked to golden perfection on a crispy crust, this pizza offers a delightful balance of sweet, savory, and herbaceous tastes, perfect for an adventurous appetizer or a light main dish.

Ingredients

Pizza Base

  • 1 (14 to 16-inch) unbaked pizza crust
  • 1 tablespoon olive oil

Fruits and Herbs

  • 2 cups blackberries (about 1 pint)
  • 10 large fresh basil leaves (roughly chopped)

Cheeses

  • 1 cup shredded mozzarella cheese
  • 1 cup shredded parmesan cheese
  • 1/2 cup ricotta cheese

Instructions

  1. Preheat Oven and Pizza Stone: Heat the oven to 500℉ (260℃) and place a 14- to 16-inch pizza stone inside to preheat thoroughly, ensuring a crisp crust.
  2. Prepare the Crust with Olive Oil: Brush the unbaked pizza crust evenly with 1 tablespoon of olive oil to help prevent sogginess and add flavor.
  3. Mash and Spread Half the Blackberries: In a small bowl, mash half of the 2 cups of blackberries until broken down, then spread this mash evenly over the oiled crust for a juicy fruit base.
  4. Add Mozzarella and Parmesan Cheese: Sprinkle 1 cup shredded mozzarella and 1 cup shredded parmesan cheese evenly over the mashed blackberries to create a rich, cheesy layer.
  5. Top with Remaining Blackberries and Ricotta: Halve the remaining blackberries and scatter them over the cheese layer. Then, dot 1/2 cup ricotta cheese in heaping teaspoon-sized spoonfuls across the pizza for creamy pockets.
  6. Bake the Pizza: Carefully transfer the pizza onto the preheated pizza stone and bake for 10 to 15 minutes, until the cheese melts and starts to brown slightly, and the crust is crisp.
  7. Add Fresh Basil Leaves: About 1 to 2 minutes before the pizza finishes baking, scatter the roughly chopped or chiffonade basil leaves evenly over the pizza, allowing their aroma to infuse.
  8. Rest and Serve: Remove the pizza from the oven and let it rest for 1 to 2 minutes to set. Slice into 8 wedges and serve hot, enjoying the vibrant combination of flavors.

Notes

  • Use a pizza stone for best results to achieve a crispy crust.
  • Fresh basil added toward the end of baking preserves its aromatic flavor.
  • Mashing half the blackberries helps create a saucy layer without overwhelming the pizza.
  • You can substitute fresh blackberries with frozen if fresh are unavailable, but thaw and drain excess juice before use.
  • Allow the pizza to cool slightly before slicing to avoid cheese sliding off.
