Ingredients

Shrimp and Seasoning

  • 1 pound peeled and deveined shrimp
  • 1 tablespoon Cajun blackening seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon olive oil

Vegetables and Dressing

  • 1 small cucumber, diced into 1/2 inch pieces
  • 1 medium tomato, diced into 1/2 inch pieces
  • 1 head romaine lettuce, chopped into 1 to 1 1/2 inch pieces
  • 1/2 cup creamy Caesar dressing

Wrap Components

  • 4 large tortilla shells
  • 1 tablespoon shredded parmesan cheese

Instructions

  1. Prepare Vegetables: Dice the tomato and cucumber into 1/2 inch pieces and set aside. Chop the romaine lettuce into 1 to 1 1/2 inch pieces and set aside separately.
  2. Prepare Shrimp: Rinse the peeled and deveined shrimp thoroughly and pat dry with a paper towel to remove excess moisture.
  3. Season Shrimp: Place the shrimp in a medium-sized bowl. Add the Cajun blackening seasoning, salt, and cayenne pepper. Toss the shrimp until they are evenly coated with the spices.
  4. Preheat Griddle: Heat your Blackstone griddle or a similar griddle on medium heat. Once hot, pour and spread the olive oil evenly across the surface.
  5. Cook First Side of Shrimp: Place all the seasoned shrimp onto the oiled griddle surface and cook undisturbed for 1 1/2 to 2 minutes to develop a nice blackened crust.
  6. Flip and Cook Second Side: Turn the shrimp over and cook for an additional 1 1/2 to 2 minutes until shrimp are opaque and cooked through.
  7. Cool Shrimp and Heat Tortillas: Remove shrimp from the griddle and let them cool for 10 minutes. While cooling, briefly heat the tortillas on the griddle until soft and pliable.
  8. Assemble Salad Mix: In a large bowl, combine the chopped lettuce, diced cucumber, diced tomato, and cooled shrimp. Drizzle with creamy Caesar dressing and toss to evenly coat all ingredients.
  9. Build Wraps: Lay one tortilla flat on a clean surface. Spoon a generous amount of the shrimp salad mixture onto the center of the tortilla and sprinkle evenly with shredded parmesan cheese.
  10. Wrap and Slice: Carefully fold the sides of the tortilla over the filling and roll tightly to enclose all ingredients. Slice the wrap diagonally at a 45-degree angle.
