This refreshing avocado salad is a quick, healthy side dish bursting with contrasting textures and vibrant flavors. Creamy avocado is beautifully balanced by juicy cherry tomatoes, crisp cucumber, and crunchy red onion and jalapeño, all brought together with a zesty lime and avocado oil dressing with a hint of honey and cumin.

Ingredients

Salad

  • ½ to 1 jalapeño pepper, diced (adjust based on spice preference)
  • ⅓ cup diced red onion
  • ¼ cup chopped fresh cilantro
  • 2 firm-ripe avocados, pitted and cut into ½-inch pieces
  • ½ English cucumber, cut into ½-inch pieces
  • ¾ cup cherry tomatoes, halved
  • Flaky sea salt, optional

Dressing

  • 3 tablespoons fresh lime juice
  • 2 tablespoons avocado oil
  • 2½ teaspoons honey
  • 1 garlic clove, grated
  • 1 teaspoon sea salt
  • ¼ teaspoon ground cumin
  • Freshly ground black pepper, to taste

Instructions

  1. Make the dressing: In a small bowl, whisk together the fresh lime juice, avocado oil, honey, grated garlic, sea salt, ground cumin, and freshly ground black pepper until well combined.
  2. Prepare garnish: Set aside a small amount of the diced jalapeño, diced red onion, and chopped cilantro to use as garnish later.
  3. Assemble the salad: Place the avocado pieces in a medium bowl. Evenly arrange the cucumber pieces, halved cherry tomatoes, and the remaining jalapeño, red onion, and cilantro on top of the avocado without mixing.
  4. Add dressing and mix gently: Drizzle most of the prepared dressing over the salad ingredients. Gently stir just enough to combine without overmixing, to avoid mashing the avocado and turning the texture too creamy like guacamole.
  5. Garnish and season: Top the salad with the reserved jalapeño, red onion, and cilantro, drizzle with a bit more dressing, and season to taste. Add extra dressing or flaky sea salt if desired.
  6. Serve immediately: This salad is best served fresh to enjoy the crisp textures and vibrant flavors.

  • Use a whole jalapeño pepper if you want a spicier salad; use half if you prefer milder heat.
