Brookies are a delicious hybrid dessert combining the rich, fudgy texture of brownies with the chewy, buttery goodness of chocolate chip cookies. This recipe layers a chocolate chip cookie dough base with a luscious brownie batter on top, baked to perfection in a 9x13-inch pan. Perfect for anyone torn between wanting cookies or brownies, brookies satisfy both cravings in one treat.

Ingredients

Cookie Layer:

  • 1/2 cup butter, softened
  • 1/2 cup light brown sugar
  • 1/4 cup white sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup semisweet chocolate chips

Brownie Layer:

  • 1 cup white sugar
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/3 cup cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish thoroughly to prevent sticking.
  2. Make Cookie Layer: In a large bowl, beat together 1/2 cup softened butter, 1/2 cup light brown sugar, 1/4 cup white sugar, and 1/2 teaspoon vanilla extract until creamy. Add 1 large egg and continue beating until the mixture is light and creamy, approximately 2 minutes.
  3. Mix Dry Ingredients for Cookie Dough: In a separate bowl, whisk together 1 1/4 cups all-purpose flour, 1/2 teaspoon salt, and 1/2 teaspoon baking soda. Gradually add this flour mixture into the butter mixture and stir until a dough forms. Fold in 1 cup semisweet chocolate chips evenly into the dough.
  4. Spread Cookie Dough: Spread the cookie dough evenly into the prepared baking dish, smoothing the surface. Set aside while preparing the brownie layer.
  5. Make Brownie Layer: In another bowl, stir together 1 cup white sugar, 1/2 cup melted butter, and 1 teaspoon vanilla extract. Add 2 eggs and beat well until smooth. Mix in 1/3 cup cocoa powder until fully combined.
  6. Add Dry Ingredients to Brownie Batter: Stir in 1/2 cup all-purpose flour, 1/4 teaspoon baking powder, and 1/8 teaspoon salt until the brownie batter is well combined without overmixing.
  7. Assemble Brookies: Pour the prepared brownie batter evenly over the cookie dough layer in the baking dish, spreading it to completely cover the cookie base.
  8. Bake: Place the dish in the preheated oven and bake for 20 to 25 minutes, or until a toothpick inserted into the center of the brookies comes out clean or with just a few moist crumbs.
  9. Cool and Serve: Allow the brookies to cool completely in the baking dish before cutting into 20 bars. Enjoy your delicious brookies!

Notes

  • You can substitute store-bought chocolate chip cookie dough for the cookie layer to save time.
  • Store brookies in an airtight container at room temperature for up to four days; placing a piece of white bread in the container helps keep them soft.
  • For freezing, freeze cookie dough and brownie batter separately, thaw in the refrigerator overnight, then assemble and bake as usual.
  • Adding nuts like pecans to the cookie layer is a tasty variation.
