This Bruschetta Chicken Pizza combines the fresh, vibrant flavors of classic bruschetta with savory shredded rotisserie chicken and cheeses atop a crispy pie crust. A perfect balance of juicy tomatoes, basil, and tangy balsamic glaze creates a deliciously satisfying homemade pizza that's easy to prepare for weeknights or gatherings.

Ingredients

Bruschetta Topping

  • 2 Plum Tomatoes (diced)
  • 1/4 Red Onion (chopped)
  • 1/8 cup Fresh Basil (torn)
  • 1 tablespoon Olive Oil
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Ground Black Pepper

Pizza Base

  • 1 Pie Crust (frozen, homemade, or store-bought)
  • 2 tablespoons Olive Oil
  • 6 ounces Mozzarella Cheese (shredded)
  • 1 ounce Parmesan Cheese (grated)
  • 1/2 cup Rotisserie Chicken (shredded)
  • 3 tablespoons Balsamic Glaze

Instructions

  1. Preheat Oven: Preheat the oven to 450 degrees Fahrenheit to ensure a hot environment for baking the pizza to crispy perfection.
  2. Prepare Bruschetta Mixture: In a medium bowl, combine the diced plum tomatoes, chopped red onion, and torn fresh basil. Add 1 tablespoon of olive oil, 1/4 teaspoon salt, and 1/8 teaspoon ground black pepper. Toss everything together until the ingredients are evenly coated and well mixed to create the fresh bruschetta topping.
  3. Prepare Pie Crust: Roll out the pie crust onto a baking sheet or pizza pan. Brush the crust evenly with 2 tablespoons of olive oil to help it brown nicely and add flavor during baking.
  4. Add Cheese and Chicken: Sprinkle the shredded mozzarella cheese evenly across the oiled crust, followed by a layer of grated Parmesan cheese. Then, distribute the shredded rotisserie chicken evenly over the cheese layer.
  5. Top with Bruschetta and Bake: Spread the prepared bruschetta mixture over the chicken and cheese layers. Place the pizza in the preheated oven and bake for 15 to 18 minutes, or until the cheese is melted, bubbly, and slightly golden.
  6. Finish and Serve: Once baked, remove the pizza from the oven and allow it to cool for 5 minutes. Drizzle the balsamic glaze over the top just before slicing and serving to add a tangy, sweet finish.

Notes

  • Use fresh, ripe tomatoes for the best bruschetta flavor.
  • If you prefer a crispier crust, bake the pie crust for 5 minutes before adding toppings.
  • You can substitute rotisserie chicken with cooked shredded chicken breast if desired.
  • Balsamic glaze can be store-bought or homemade by reducing balsamic vinegar until thickened.
  • For a lower-fat version, use part-skim mozzarella or reduce the cheese quantities.
