These Buffalo Chicken Egg Rolls are a crispy and flavorful appetizer that combines tender shredded chicken with a creamy, spicy buffalo filling wrapped in crispy egg roll wrappers. Perfect for game day or a tasty snack, these egg rolls are cooked in an air fryer for a healthier, golden-brown finish in under 30 minutes.

Ingredients

Filling

  • 2 cups shredded chicken (rotisserie chicken works great)
  • 8 ounces whipped cream cheese
  • 3/4 cup ranch dressing
  • 1/4 cup hot sauce
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 4 green onions, thinly sliced

  • 20 egg roll wrappers
  • Olive oil, for brushing

Instructions

  1. Preheat the air fryer. Set your air fryer to 375° F to get it ready for cooking the egg rolls evenly and to a crispy golden finish.
  2. Prepare the filling. In a large mixing bowl, combine the whipped cream cheese, ranch dressing, hot sauce, shredded cheddar, shredded mozzarella, and sliced green onions. Fold in the shredded chicken until well mixed.
  3. Fill the egg rolls. Lay one egg roll wrapper on a clean surface in a diamond orientation. Spoon about two tablespoons of the buffalo chicken filling crosswise in the center of the bottom half of the wrapper.
  4. Wrap the egg rolls. Fold the bottom corner over the filling and roll it snugly halfway. Moisten the edges of the wrapper with water using your finger. Fold in both sides toward the center tightly over the filling, then continue rolling and seal the top corner to close. Place the sealed egg rolls seam side down on a flat surface.
  5. Brush with olive oil. Lightly brush all sides of the egg rolls with olive oil to ensure a crispy and golden exterior when air frying.
  6. Cook in the air fryer. Arrange the egg rolls seam side down in the air fryer basket. Cook for 6-7 minutes, then flip and cook for another 2-3 minutes until they turn golden brown and crispy.
  7. Serve warm. If making multiple batches, keep cooked egg rolls warm by placing them in a 200° F oven. Garnish with extra sliced green onions and serve with ranch or blue cheese dressing for dipping.

  • You can cook the egg rolls in a conventional oven by baking at 400° F for 15-20 minutes, turning halfway through for even crispness.
  • Using rotisserie chicken saves time and adds great flavor, but you can also cook and shred your own chicken breast.
