Ingredients

For the Taquitos

  • 2 cups Shredded Cooked Chicken
  • 6-8 Corn Tortillas
  • 1/2 cup Buffalo Sauce
  • 2 tbsp Melted Butter
  • 1 cup Shredded Cheddar Cheese

For the Dip

  • 1/4 cup Plain Greek Yogurt
  • 2 tbsp Green Onion
  • 1/4 cup Red Onion

Instructions

  1. Prep the Filling: In a mixing bowl, combine shredded chicken, buffalo sauce, melted butter, shredded cheddar cheese, garlic powder, and sea salt. Stir the mixture until the chicken is evenly coated and glossy, resulting in a rich, tangy, and buttery flavor base.
  2. Warm the Tortillas: Heat a dry skillet over medium heat and warm each corn tortilla for 15 to 20 seconds on each side until they become soft and flexible. This prevents the tortillas from cracking when rolling.
  3. Roll the Taquitos: Spoon approximately 2 tablespoons of the buffalo chicken filling onto each warmed tortilla. Roll the tortillas tightly and place them seam-side down on a baking sheet. Rolling tightly will help achieve a crispier texture when cooked.
  4. Fry Until Golden: In a skillet, heat oil over medium heat until it shimmers. Carefully place the rolled taquitos seam-side down into the hot oil and fry for 1 to 2 minutes per side, or until they turn golden brown and crisp. Transfer the cooked taquitos onto paper towels to drain any excess oil.
  5. Make the Dip: In a small bowl, mix the plain Greek yogurt with chopped green onion and red onion to create a fresh, cooling dip that balances the spicy heat of the taquitos.
