Ingredients

Rice

  • 2 tbsp low-sodium soy sauce

Instructions

  1. Rinse the Rice: Rinse the sushi rice under cold running water until the water runs clear. This step removes excess starch and helps to achieve fluffy, well-separated cooked rice.
  2. Cook the Rice: Place the rinsed rice and 1.5 cups of water in a pot. Bring to a boil, then reduce heat to low, cover, and simmer until the water is absorbed and the rice is tender, approximately 15-18 minutes.
  3. Season the Rice: Transfer the cooked rice to a bowl while still warm. Gently fold in the rice vinegar, sugar, and salt until well combined, allowing the flavors to meld and the rice to cool slightly.
  4. Prepare Vegetables: Slice the cucumber into thin rounds and dice the ripe avocado, setting them aside for final assembly.
  5. Assemble the Bowls: Divide the seasoned sushi rice evenly between two serving bowls. Top each bowl with sliced cucumber, diced avocado, and imitation crab meat distributed evenly.
