Ingredients

Crust:

  • 1 1/2 cups quick oats
  • 2 1/4 cups flour
  • 1 1/2 cups brown sugar
  • 1 1/4 cups butter

Filling:

  • 1/4 cup butter
  • 1 cup brown sugar
  • 1/4 cup milk
  • 2 tsp vanilla extract
  • 2 tbsp flour

Instructions

  1. Melt Butter: Completely melt the butter to prepare it for mixing with the dry ingredients.
  2. Prepare Crust Mixture: Combine the melted butter with quick oats, flour, and brown sugar until fully incorporated.
  3. Press and Bake Crust: Press two-thirds of the crust mixture evenly into a greased or parchment-lined 9x13 inch baking pan. Bake at 325ºF for 10 minutes. Remove and allow to cool to touch.
  4. Reserve Topping: Set aside the remaining one-third of the crust mixture to use later as the topping.
  5. Make Caramel Filling: In a saucepan, melt the 1/4 cup butter over medium heat.
  6. Add Brown Sugar: Stir in brown sugar until the mixture is smooth, about 1 minute.
  7. Incorporate Milk, Vanilla, and Flour: Add milk, vanilla extract, and flour one at a time, stirring well after each addition.
  8. Boil Filling: Bring the mixture to a slow boil, stirring continuously, and cook for about 3 minutes until thickened.
  9. Remove from Heat: Take the caramel filling off the heat once it reaches a thick consistency.
  10. Pour Filling Over Crust: When the crust has cooled to the touch, pour the warm caramel filling evenly over it.
  11. Add Topping: Sprinkle the reserved crust mixture over the caramel layer as a crumbly topping.
  12. Bake Bars: Bake the assembled bars at 300ºF for an additional 20 minutes.
  13. Cool Bars: Allow the bars to cool completely; they may seem slightly runny when warm but will firm up upon cooling.
