A deliciously sweet and crunchy caramel popcorn recipe perfect for holidays and special occasions. This classic treat combines buttery caramel with popped popcorn, baked to a perfect chewiness that you can adjust to your preference.

Ingredients

Popcorn

  • 5 quarts popped popcorn

Caramel Sauce

  • 1 cup butter
  • 2 cups brown sugar
  • ½ cup corn syrup
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda

Instructions

  1. Prepare Ingredients: Gather all ingredients and preheat your oven to 250 degrees F (120 degrees C). Place the popped popcorn in a very large bowl to make sure it has enough room for coating.
  2. Make Caramel: Melt the butter in a medium saucepan over medium heat. Add the brown sugar, corn syrup, and salt, stirring constantly. Bring the mixture to a boil and let it boil without stirring for 4 minutes to develop the caramel.
  3. Add Flavors: Remove the saucepan from heat and stir in the vanilla extract and baking soda. The mixture will foam slightly—this will help create a light texture for the caramel coating.
  4. Coat Popcorn: Pour the caramel in a thin stream over the popcorn while stirring continuously to evenly coat all the popcorn kernels with the caramel sauce.
  5. Bake: Divide the caramel-coated popcorn evenly between two large shallow baking dishes. Bake in the preheated oven for 1 hour, stirring every 15 minutes to ensure even baking and prevent burning.
  6. Cool and Serve: Remove from the oven and let the caramel popcorn cool completely in the baking dishes before breaking into pieces. Enjoy your sweet, crunchy snack!

Notes

  • For chewier caramel popcorn, reduce the baking time slightly.
  • Use a very large bowl to avoid mess when mixing popcorn with hot caramel.
  • Stirring every 15 minutes during baking ensures even coating and prevents burning.
  • Store leftover caramel popcorn in an airtight container to maintain freshness.
