This Caramelized Banana Yogurt Bowl is a quick and delicious breakfast or snack option that combines creamy nonfat Greek yogurt with warm, caramelized banana slices and toasted nuts. Enhanced with a hint of vanilla protein powder, cinnamon, and a drizzle of peanut butter, this bowl offers a perfect balance of sweet and savory flavors with a satisfying texture contrast.

Ingredients

Yogurt Mixture

  • 1 cup nonfat Greek yogurt (or Skyr)
  • ½ scoop vanilla protein powder (e.g., Clean Simple Eats)

Caramelized Banana

  • 1 medium banana, sliced
  • 1 teaspoon coconut oil or butter
  • 2 teaspoons maple syrup (optional but adds caramel flavor)
  • ¼ teaspoon cinnamon
  • Pinch of salt

Toppings

  • 1 tablespoon chopped walnuts or pecans
  • Drizzle of peanut butter
  • Sprinkle of flaky sea salt

Instructions

  1. Prepare the skillet: Heat a small skillet over medium heat to get it ready for caramelizing the banana.
  2. Caramelize the banana: Add coconut oil, maple syrup, and cinnamon to the skillet. Place the sliced banana in the skillet and cook for 2–3 minutes on each side until golden brown and caramelized. Remove the bananas from the skillet once done.
  3. Toast the nuts: Using the same skillet, immediately add the chopped walnuts or pecans. Toast them for about 1 minute until fragrant, then remove from heat.
  4. Mix the yogurt: While the bananas and nuts cook, stir together the nonfat Greek yogurt and vanilla protein powder until smooth and well combined.
  5. Assemble the bowl: Pour the yogurt mixture into a serving bowl. Top with the warm caramelized bananas, toasted nuts, a drizzle of peanut butter, and finish with a sprinkle of flaky sea salt for added flavor and texture balance.

Notes

  • Use ripe but firm bananas for best caramelization results.
  • The maple syrup is optional; omitting it will reduce sugar content but also reduce caramel flavor.
  • You can substitute walnuts or pecans with other nuts or seeds as desired.
  • For a vegan version, use plant-based yogurt and skip or replace butter with coconut oil.
  • Adjust cinnamon according to taste preference.
