Instructions

  1. Preheat and prepare baking tray: Preheat your oven to 375°F (190°C) and line a large baking tray with parchment paper. Set aside to use later.
  2. Prepare goat cheese: Crumble the goat cheese into small pieces and set aside for topping after baking.
  3. Caramelize the onions: Heat olive oil in a medium skillet over high heat. Add the sliced onions and cook stirring frequently until they begin to brown, about 5 minutes. Lower heat to medium-low and continue cooking the onions for an additional 15 to 20 minutes, stirring occasionally, until they are deeply golden brown and very soft. Remove skillet from heat.
  4. Assemble the tarts: Cut the puff pastry sheet into 12 equal squares and place them on the prepared baking tray. Brush the edges of each pastry square with the whisked egg to encourage browning and sealing. Spoon a portion of the caramelized onions onto the center of each square.
  5. Bake: Place the tray in the preheated oven and bake the tarts for approximately 15 minutes, or until the pastry is golden, puffed, and cooked through. Remove from the oven.
  6. Add toppings and serve: Immediately top each tart with crumbled goat cheese, a drizzle of balsamic reduction, and a sprinkle of fresh chopped parsley. Serve hot for best flavor and texture.
