Ingredients

Pizza Dough and Crust

  • 12 oz. pizza dough (at room temperature)
  • 1 tablespoon olive oil
  • 2 tablespoons grated Parmesan cheese

  • 1 tablespoon melted butter

Pizza Toppings

  • ½ cup marinara sauce
  • 1 ¾ cups whole milk, low moisture mozzarella cheese
  • 14 slices pepperoni
  • ¼ cup sliced onions and peppers

Instructions

  1. Preheat Oven: Preheat your oven to 475°F, ideally letting it heat for 30 minutes to ensure the cast iron skillet becomes very hot, which helps in achieving a crispy crust.
  2. Prepare Dough: If you have 1 lb of dough, remove one quarter to end with 12 oz. of dough at room temperature for best results.
  3. Shape Dough: Roll the dough into a 14-inch circle on a lightly floured surface, then spray a 12-inch cast iron skillet with nonstick spray. Transfer the dough into the skillet and work it halfway up the sides before rolling down to form a well-defined crust.
  4. Add Oil and Seasoning: Using a pastry brush, spread 1 tablespoon olive oil evenly over the dough's top surface. Sprinkle with Parmesan cheese and dried oregano. Poke holes across the dough surface with a fork to vent air and prevent bubbles during baking.
  5. Par-Bake Crust: Place the skillet on the lower oven rack and bake for 5 minutes. Remove skillet, dab excess oil off with a paper towel, and press the crust further onto the skillet to ensure even contact.
  6. Add Toppings: Spread the marinara sauce over the baked crust, then layer mozzarella cheese and distribute pepperoni slices, onions, and peppers evenly over the pizza.
  7. Bake Pizza: Return the skillet to the lower oven rack and bake for an additional 10 minutes until cheese melts and crust starts to brown.
