Cheesesteak Tortellini Skillet is a delicious and comforting twist on the classic cheesesteak sandwich, combining tender ribeye steak, sautéed peppers and onions, creamy cheese sauce, and tender tortellini all cooked together in one skillet for a quick and satisfying meal.

  • Freshly shaved ribeye or thinly sliced steak for cheesesteaks – 12 oz
  • 1 package refrigerated tortellini (about 9 oz)
  • 1 finely chopped bell pepper
  • 1 finely chopped onion
  • 3 garlic cloves, chopped
  • 6 slices Cooper Sharp American cheese (or more, if desired)
  • 1/2 cup heavy cream or half and half
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sauté Vegetables: Heat olive oil in a large skillet over medium-high heat. Add the chopped onions, bell pepper, and garlic, and sauté for 5 minutes until softened and fragrant. Remove the vegetables from the skillet and set aside.
  2. Cook the Steak: Add the shaved ribeye steak to the same skillet and cook until browned and fully cooked, chopping the steak as you go to create bite-sized pieces.
  3. Add Pasta and Vegetables: Return the sautéed peppers and onions to the skillet with the steak, then add the refrigerated tortellini.
  4. Cook Tortellini: Cook everything together for another 5-7 minutes, stirring frequently, until the tortellini is tender and cooked through.
  5. Make Cheese Sauce: Lower the heat and add the heavy cream or half and half along with the slices of Cooper Sharp American cheese. Stir continuously until the cheese is completely melted and the pasta is well coated with a creamy sauce.
  6. Serve: Remove from heat and garnish with fresh parsley. Serve immediately while hot.

  • If you prefer a cheesier dish, add more cheese to taste.
  • Half and half can substitute heavy cream for a lighter sauce.
