This Cheesy Broccoli Rice Casserole is a comforting and easy-to-make dish featuring tender broccoli, creamy cheese sauce, and fluffy white rice baked to perfection. A delicious combination of textures and flavors perfect for a family meal or a hearty side dish.

Ingredients

Main Ingredients

  • 1 and 1/2 cups quick cooking white rice (about 4 cups cooked)
  • 1/2 cup (1 stick) unsalted butter
  • 1 medium white onion, chopped
  • 4 cups fresh broccoli florets
  • 1 (10.5 ounce) can cream of chicken soup (1 and 1/4 cups)
  • 8 ounces processed American cheese, divided (such as Velveeta) or 2 cups good-melting shredded cheddar cheese
  • 1/2 cup milk
  • 1/3 cup crushed potato chips

Instructions

  1. Preheat Oven: Preheat your oven to 350°F to prepare for baking the casserole later.
  2. Cook Rice: Cook the quick cooking white rice according to the package directions until tender and fluffy.
  3. Sauté Vegetables: In a large skillet over medium heat, melt the butter. Add the chopped onion and fresh broccoli florets, cooking until the onion becomes transparent and the broccoli is slightly tender.
  4. Make Cheese Sauce: Stir in the cream of chicken soup, 4 ounces of the American or cheddar cheese, and the milk into the skillet. Continue stirring until the cheese has fully melted and the mixture is smooth.
  5. Combine Rice and Sauce: Remove the skillet from heat and fold in the cooked rice, mixing until all ingredients are well combined.
  6. Prepare Casserole Dish: Lightly grease an 8×8-inch casserole dish, then pour the rice and broccoli cheese mixture evenly into the dish.
  7. Top Casserole: Shred or crumble the remaining 4 ounces of cheese over the top of the casserole mixture, and then sprinkle evenly with the crushed potato chips.
  8. Bake: Place the casserole in the preheated oven and bake for 30 minutes, or until the cheese on top is melted, the potato chips are golden brown, and the casserole is bubbly throughout.

Notes

  • For a vegetarian version, substitute cream of chicken soup with cream of mushroom or cream of celery soup.
  • Use freshly grated sharp cheddar for a more flavorful cheese topping.
  • Crushed potato chips add a nice crunchy texture; for a gluten-free option, use gluten-free chips or substitute with crushed nuts or breadcrumbs.
  • Make sure to cook the rice fully before combining, as it will not cook further in the oven.
  • This casserole can be made ahead and refrigerated; bake covered with foil and increase baking time by 10-15 minutes.
