This Cheesy Enchilada Chili is a hearty, comforting dish that blends seasoned ground beef with creamy salsa con queso, potato soup, sour cream, and a medley of beans, corn, and green chilies. Perfect for a cozy dinner, this chili offers rich southwestern flavors with a cheesy, smooth texture and is best served with crunchy tortilla chips or Fritos.

Ingredients

Meat and Seasonings

  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 1/4 cup water

Cheese and Dairy

  • 1 jar Tostitos Salsa Con Queso (approximately 15 oz)
  • 1 can potato soup (10.75 oz)
  • 1 1/4 cups sour cream

Broths and Liquids

  • 1 1/4 cups beef broth
  • 1/2 cup chicken broth

Vegetables and Beans

  • 1 can fire-roasted diced green chilies (4 oz)
  • 1 cup frozen corn
  • 1 cup pinto beans or black beans, drained and rinsed

Instructions

  1. Brown Beef: Heat a skillet over medium heat and add the ground beef. Cook, stirring occasionally, until the beef is fully browned and no longer pink. Drain any excess fat to reduce grease.
  2. Season Beef: Add 2 tablespoons of taco seasoning and 1/4 cup of water to the cooked beef. Stir thoroughly and continue cooking until the water fully absorbs and the seasoning evenly coats the beef.
  3. Combine Ingredients: Transfer the seasoned beef into a Dutch oven or large pot. Pour in the jar of salsa con queso, the can of potato soup, sour cream, beef broth, and chicken broth. Stir well until the sour cream melts entirely and the mixture is smooth and evenly blended.
  4. Add Remaining Ingredients: Mix in the fire-roasted diced green chilies, frozen corn, and drained pinto or black beans. Stir until all ingredients are evenly distributed throughout the chili.
  5. Heat Through: Bring the chili to a boil over medium-high heat. Once boiling, reduce the heat to low and allow it to simmer gently. Stir frequently to prevent sticking and cook for 10-15 minutes until heated through and flavors meld.
  6. Serve: Ladle the hot enchilada chili into bowls. Serve alongside tortilla chips or Fritos for added crunch. Optionally, garnish with jalapeños or your favorite chili toppings for extra flavor. Enjoy your hearty meal!

Notes

  • Draining excess fat from the beef helps reduce greasiness in the chili.
  • You can substitute black beans for pinto beans or vice versa for preferred texture and taste.
  • Adjust the amount of chili peppers or add jalapeños to increase spiciness according to your preference.
  • For a thicker chili, simmer for a longer time or reduce the liquid quantities slightly.
  • Serve with toppings like shredded cheese, diced onions, or cilantro to enhance flavor.
