Baked to golden perfection and seasoned with oregano and garlic powder, they offer a delicious handheld pizza experience perfect for family dinners or parties.

Ingredients

Dough

  • 1 1/4 cups self-rising flour (160g)
  • 3/4 cup Greek yogurt (180g)

Filling

  • 1/4 cup pizza sauce
  • 1/2 - 3/4 cup shredded cheese (mozzarella recommended)
  • 1/2 cup finely chopped vegetables of choice (e.g., bell peppers, onions, mushrooms)

Topping & Seasoning

  • 1 tablespoon unsalted butter, melted
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder

Instructions

  1. Prepare the Dough: Preheat your oven to 400°F (200°C). In a mixing bowl, combine the self-rising flour and Greek yogurt. Use a spoon to mix initially, then your hands to bring the mixture together into a dough. It may seem dry and crumbly at first, but continue mixing until it forms a smooth ball.
  2. Knead the Dough: Transfer the dough onto a lightly floured surface and knead it for a few minutes until it becomes smooth and elastic. If the dough is sticky, sprinkle in a little extra flour to make it manageable.
  3. Divide and Roll: Divide the dough into 4 or 6 equal balls. Using a lightly floured rolling pin, roll each ball out to about 1/4 inch thickness. Arrange the rolled-out dough pieces on a baking sheet lined with parchment paper.
  4. Add the Filling: Spread about a tablespoon of pizza sauce over half of each dough round, leaving a small border around the edge. Sprinkle shredded mozzarella cheese evenly over the sauce, then add your chosen finely chopped vegetables or other favorite pizza toppings.
  5. Seal the Pockets: Fold the uncovered half of the dough over the filling to create a pocket. Press the edges together firmly, using your fingers or a fork, to seal well and prevent filling from leaking during baking.
  6. Season and Butter: Brush the tops of the pizza pockets with melted unsalted butter or oil. Sprinkle dried oregano and garlic powder evenly over each pocket for extra flavor.
  7. Bake: Place the baking sheet in the preheated oven and bake the pizza pockets for 18-20 minutes or until the crusts turn golden brown and cooked through.
  8. Cool and Serve: Remove the pizza pockets from the oven and let them cool for a few minutes before serving. Be cautious as the filling inside will be hot. Serve with extra pizza sauce for dipping if desired, and enjoy your delicious homemade pizza pockets!

Notes

  • Using Greek yogurt in the dough adds moisture and a slight tang, making the pockets tender and flavorful.
  • You can customize the filling with any pizza toppings you like, such as pepperoni, olives, or spinach.
  • Ensure edges are well sealed to avoid leaking fillings while baking.
  • Allow the pockets to cool slightly before eating to prevent burns from hot filling.
  • Store leftovers in an airtight container in the refrigerator and reheat in the oven for best texture.
