These Cherry Mango Yogurt Popsicles are a refreshing and healthy treat made with plain Greek yogurt, fresh or frozen mango and cherries, and a scoop of vanilla protein powder for added nutrition. With no added sugar, these popsicles offer a naturally sweet and creamy dessert perfect for hot days or a nutritious snack.

Ingredients

Yogurt Base

  • 2 cups plain Greek yogurt
  • 1 scoop vanilla protein powder

Fruit Layers

  • 1 cup mango (fresh or defrosted if frozen)
  • 1 cup cherries (fresh or defrosted if frozen)

Instructions

  1. Prepare the Mango Layer: Add 1 cup of Greek yogurt, 1/2 scoop of vanilla protein powder, and 1 cup of mango to a high-speed blender or food processor. Blend for 10-15 seconds until the mango is well incorporated but not overly pureed. Pour the mango mixture into a bowl and set aside.
  2. Prepare the Cherry Layer: Repeat the blending process using the remaining 1 cup of yogurt, 1/2 scoop of protein powder, and 1 cup of cherries. Blend until just combined to maintain texture.
  3. Assemble the Popsicles: Alternate pouring the cherry mixture and mango mixture into popsicle molds layer by layer. Insert popsicle sticks into each mold.
  4. Freeze: Place the filled molds in the freezer for 4 to 6 hours, or until the popsicles are completely solid.
  5. Serve: Remove popsicles from molds by running warm water briefly over the outside of the molds if needed and enjoy your healthy and delicious frozen treat!

Notes

  • Use fresh or frozen fruit based on availability; frozen fruit should be defrosted for easier blending.
  • You can substitute vanilla protein powder with any flavor or omit it if preferred.
  • For a dairy-free version, try using coconut yogurt instead of Greek yogurt.
  • To make the layers more distinct, chill each fruit mixture before adding the next layer in the molds.
  • Store popsicles in an airtight container or cover molds to prevent freezer burn.
