Ingredients

Espresso and Ladyfingers

  • 1820 ladyfingers

Mascarpone Cream

  • 1 1/4 cups heavy whipping cream
  • 1 cup mascarpone cheese, softened
  • 1/3 cup powdered sugar

Cherry Layer & Toppings

  • 1 1/2 cups cherry compote (homemade or store-bought)

Instructions

  1. Whip the Cream: Whip the heavy whipping cream in a chilled bowl using a mixer until soft peaks form. This creates a light and fluffy texture necessary for the mascarpone mixture. Set aside.
  2. Prepare Mascarpone Mixture: In a separate bowl, beat the softened mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy, ensuring there are no lumps.
  3. Combine Cream and Mascarpone: Gently fold the whipped cream into the mascarpone mixture. Folding carefully keeps the mixture light and airy, perfect for layering.
  4. Assemble First Layer: Quickly dip each ladyfinger into the cooled espresso, making sure not to soak them too long to avoid sogginess. Arrange the dipped ladyfingers in a single layer in your chosen baking dish.
  5. Spread Mascarpone Layer: Evenly spread half of the mascarpone cream mixture over the ladyfingers, creating a smooth layer.
  6. Add Cherry Compote: Spoon the cherry compote evenly over the mascarpone cream layer, adding a sweet and tangy fruit layer to the dessert.
  7. Second Ladyfinger Layer: Dip the remaining ladyfingers in espresso and place them over the cherry compote as the second layer.
  8. Top with Remaining Cream: Spread the remaining mascarpone cream mixture evenly over the second layer of ladyfingers.
