These Chewy Almond Cookies are a delightful treat featuring fine almond flour and natural almond extract for a rich, nutty flavor. With a crisp golden edge and a chewy center, they're perfect for almond lovers seeking a simple, quick-to-make cookie that stores well.

Ingredients

Dry Ingredients

  • 3 1/4 cups (~325g) Almond Flour (unbleached, fine ground)
  • 1 1/4 cup Granulated Sugar (unrefined, cane sugar, can be reduced by up to 1/2 to taste)
  • a pinch of salt

Wet Ingredients

  • 2 Eggs (large, room temperature)
  • 3 tsp Natural Almond Extract (or to your taste)

For Decoration

  • Few sliced almonds
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (325°F if using convection bake). Line 1 to 2 baking trays with parchment paper and set them aside to prepare for baking.
  2. Mix wet ingredients: In a large mixing bowl, combine the eggs, granulated sugar, and natural almond extract. Whisk these together until well blended and slightly frothy.
  3. Add dry ingredients: Stir in the almond flour and a pinch of salt to the wet mixture using a spoon or spatula. Mix until fully incorporated, forming a thick dough.
  4. Shape the cookies: Scoop out approximately 1 tablespoon of dough at a time, roll each into a ball, and place them spaced 1 to 2 inches apart on the prepared baking sheets.
  5. Decorate: Gently press a few sliced almonds onto the top of each dough ball for added texture and visual appeal.
  6. Bake: Place the trays in the oven and bake for 15 to 17 minutes, or until the tops of the cookies are dry to the touch and the edges and bottoms are a golden brown.
  7. Cool and dust: Allow the cookies to cool completely on the baking sheets. Once cool, dust them lightly with powdered sugar.
  8. Storage: Store the cookies in an airtight container at room temperature for 3 to 5 days or freeze them for up to 6 months to maintain freshness.
  9. Enjoy: Serve and enjoy your chewy almond cookies as a perfect snack or dessert treat.

Notes

  • You can reduce the granulated sugar by up to half according to your sweetness preference.
  • Using room temperature eggs helps the mixture blend more evenly.
  • Make sure to space cookies apart to prevent sticking during baking.
  • These cookies store well both at room temperature and frozen, making them ideal for batch preparation.
  • For a gluten-free option, ensure the almond flour is certified gluten-free.
