Ingredients

Stuffing

  • 6 ounces stuffing mix (Stove Top Cornbread or any flavor)
  • 1 1/2 cups chicken stock or broth
  • 2 tablespoons butter

Casserole Mixture

  • 10.5 ounces Cream of Mushroom Soup
  • 1 cup milk
  • 8 ounces sour cream (or substitute Greek yogurt)
  • 1 teaspoon poultry seasoning
  • 3 cups shredded rotisserie chicken
  • 2 cups chopped broccoli florets
  • 1 1/2 cups shredded Colby/Jack cheese

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C) and lightly spray a 9 x 13-inch baking dish with cooking spray to prevent sticking.
  2. Prepare stuffing: In a medium saucepan over medium heat, bring the chicken stock and butter to a boil. Remove from heat and stir in the stuffing mix until well coated. Let it sit for at least 5 minutes to absorb the liquid and soften.
  3. Mix casserole base: In a large bowl, whisk together the cream of mushroom soup, milk, sour cream, and poultry seasoning until smooth and combined.
  4. Add main ingredients: Fold in the shredded rotisserie chicken, chopped broccoli florets, and shredded Colby/Jack cheese into the soup mixture. Stir until evenly blended.
  5. Assemble casserole: Transfer the chicken mixture into the prepared baking dish, spreading it out evenly. Then, spread the prepared stuffing mixture evenly over the top of the casserole.
