This delicious chicken and asparagus casserole combines tender egg noodles, fresh asparagus, and a creamy chicken mixture topped with melted Parmesan cheese. Perfect for spring when asparagus is fresh, this comforting casserole is easy to prepare and can be spiced up with salsa for added flavor.

Ingredients

Base

  • 1 (8 ounce) package egg noodles

Chicken Mixture

  • 1 ⅓ tablespoons olive oil
  • 1 onion, chopped
  • 1 cup chopped, cooked chicken meat
  • 1 red bell pepper, chopped
  • 2 stalks celery, chopped
  • 1 cup chicken stock
  • 1 ½ cups sour cream
  • ½ teaspoon dried oregano

Vegetables & Toppings

  • 1 pound fresh asparagus, trimmed and cut into 2-inch pieces
  • 8 tablespoons grated Parmesan cheese, divided

Instructions

  1. Prepare Ingredients: Gather all ingredients and preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 1 1/2-quart casserole dish to prevent sticking.
  2. Cook Noodles: Bring a large pot of lightly salted water to a rapid boil. Add the egg noodles and cook until almost tender, about 5 minutes. Drain the noodles well and set aside.
  3. Sauté Vegetables and Chicken: Heat olive oil in a heavy skillet over medium heat. Add chopped onion and cook for 4 to 5 minutes, stirring frequently until softened. Add cooked chicken, red bell pepper, celery, and chicken stock. Bring the mixture to a boil, then reduce heat and simmer for 5 minutes.
  4. Mix in Sour Cream and Seasoning: Stir sour cream and dried oregano into the skillet mixture until fully combined and heated through. Remove from heat.
  5. Assemble the Casserole: Spread half of the chicken mixture evenly in the prepared casserole dish. Arrange the asparagus pieces evenly over the chicken mixture. Then distribute the cooked noodles evenly on top of the asparagus. Sprinkle 5 tablespoons of grated Parmesan cheese over the noodles.
  6. Complete Assembly and Bake: Cover the noodles with the remaining chicken mixture, spreading it evenly. Sprinkle the remaining 3 tablespoons of Parmesan cheese on top. Place the casserole in the preheated oven and bake until the cheese has melted and the top is golden brown, approximately 30 minutes.

  • For a spicier flavor, add salsa to the sour cream mixture before assembling the casserole.
