Ingredients

Cilantro Lime Rice

  • 1 cup long-grain white rice, rinsed
  • 1 ½ cups water
  • ¼ teaspoon salt, plus more to taste
  • 1 lime, zested plus 2 tablespoons fresh lime juice
  • ¼ cup chopped cilantro

Salad and Toppings

  • 1 head romaine lettuce, chopped
  • 1 cup tomatoes, diced
  • 1 avocado, chopped
  • 1 cup frozen corn, thawed
  • 1 (15-ounce) can black beans, rinsed and drained
  • ½ small red onion, chopped

Instructions

  1. Marinate the Chicken: In a large bowl, combine olive oil, lime juice, chopped chipotle chilis, adobo sauce, garlic powder, and salt. Add the chicken strips and toss thoroughly to coat. Cover the bowl and refrigerate for at least 2 hours, or up to overnight to let the flavors infuse.
  2. Cook the Chicken: Heat a large pan over medium-high heat. Remove the chicken from the marinade, then add the chicken strips to the hot pan. Cook while stirring occasionally until the chicken is fully cooked through, about 5 minutes. Remove from heat and set aside.
