Ingredients

Chicken and Vegetables

  • 4 cups rotisserie chicken, shredded

Topping

  • 1 (11.36 ounce) package Red Lobster Cheddar Bay Biscuit Mix
  • Seasoning packet from biscuit mix
  • 2 cups whole milk
  • 1/2 cup (1 stick) butter, melted

Soup Mixture

  • 1 (10.5 ounce) can cream of chicken soup
  • 2 cups low-sodium chicken broth
  • 1/8 teaspoon black pepper
  • 2 teaspoons Better Than Bouillon Roasted Chicken Base

Garnish (Optional)

  • 2 tablespoons fresh chopped parsley

Instructions

  1. Preheat the oven: Set your oven to 375 degrees Fahrenheit to prepare for baking the cobbler.
  2. Melt butter and prepare baking dish: Melt the butter in the microwave, then pour it evenly into a 9x13 inch baking dish, coating the bottom thoroughly.
  3. Layer chicken and vegetables: Spread the shredded rotisserie chicken in a single even layer over the melted butter. Next, layer the frozen mixed vegetables evenly over the chicken without stirring to maintain distinct layers.
  4. Prepare biscuit topping: In a medium bowl, combine the Cheddar Bay Biscuit Mix, its seasoning packet, and the whole milk. Stir until the mixture is well blended, then gently pour the batter over the chicken and vegetables, spreading it carefully and evenly without mixing.
  5. Make soup mixture: In a separate bowl, whisk together the cream of chicken soup, low-sodium chicken broth, black pepper, and Better Than Bouillon Roasted Chicken Base until smooth and fully dissolved. Pour this mixture evenly over the biscuit topping without stirring.
  6. Bake the cobbler: Place the baking dish uncovered into the preheated oven and bake for 55 to 65 minutes, or until the top is very golden brown. The center may appear runny; remove the cobbler from the oven and allow it to stand for 10 to 15 minutes so the sauce thickens before serving.
