Ingredients

Chicken

  • 2 1/2 lbs skinless, boneless chicken thighs

Sauce

  • 1 cup ketchup
  • 1 cup water
  • 1/2 cup brown sugar
  • 56 g dry onion soup mix (2 packages of 28 g each)

Thickening (optional)

  • 1 tbsp cornstarch
  • 2 tsp water

Instructions

  1. Preheat and prepare: Preheat your oven to 350°F (175°C) and spray the bottom of a small roaster or casserole dish with non-stick cooking spray to prevent sticking.
  2. Arrange chicken: Place the boneless, skinless chicken thighs evenly in the prepared roaster or casserole dish.
  3. Make sauce: In a medium bowl, whisk together ketchup, water, brown sugar, and dry onion soup mix until fully combined.
  4. Cover chicken with sauce: Pour the prepared sauce evenly over the chicken pieces, ensuring all are well coated.
  5. Seal dish: Cover the roaster or casserole dish tightly with aluminum foil to keep moisture in during baking.
  6. Bake chicken: Place the dish in the oven and bake for 1 hour, or until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through.
  7. Prepare thickening slurry (optional): If the sauce appears too thin after baking, in a small bowl mix 1 tablespoon of cornstarch with 2 teaspoons of cold water until smooth to create a slurry.
  8. Remove chicken and thicken sauce: Carefully remove the chicken from the casserole dish and keep warm. Pour the sauce into a small saucepan and stir in the cornstarch slurry.
  9. Finish sauce: Heat the sauce over medium heat, stirring frequently, for about 10 minutes or until it thickens to a gravy-like consistency.
  10. Serve: Pour the thickened sauce over the chicken and serve warm.
  11. Garnish (optional): Garnish with freshly chopped parsley for a bright, fresh touch before serving.
