Ingredients

Salad

  • 2 cups rotisserie chicken (diced)

Instructions

  1. Toast Pecans: Place pecans in a dry skillet over medium heat. Toast them, stirring occasionally, until they become fragrant, about 3-4 minutes. Watch carefully to prevent burning. Remove from heat and let cool, then finely chop.
  2. Combine Salad Ingredients: In a large mixing bowl, add the diced rotisserie chicken, toasted and chopped pecans, dried cranberries, and thinly sliced celery. In a separate small bowl, whisk together mayonnaise, sour cream, honey, Dijon mustard, poppy seeds, and lemon juice.
  3. Mix Dressing and Salad: Pour the dressing over the salad ingredients in the large bowl. Gently stir everything together until all ingredients are evenly coated. Season with 1/4 teaspoon salt and 1/8 teaspoon pepper, then taste and adjust seasoning if needed.
